HUEVOS ROTOS SOBRE CHANQUETES
Ingredients:
2 hen eggs
100 chanquetes
¼ liters of olive oil
Wheat flour
Salt
Directions:
In a frying pan, warm the oil until it begins to simmer. Next, put the chanquetes in the flour and add a pinch of salt. When finished frying, place the fried chanquetes on a plate with a paper towel to absorb excess oil. Transfer to a clean dish. Next, fry the eggs in oil and add a pinch of salt. When finish cooking, place the eggs on top of the croquettes and garnish with rosemary. Before eating, cut and mix the chanquetes and eggs together.
